Garlicky Green Beans with Almonds Recipe

Ingredients:


  • 1 lb. Green Beans, fresh
  • 5 large Garlic Cloves, peeled and cut into thin slices
  • 6 Shallots peeled and cut into thin slivers
  • 2 Tbsp. Olive Oil 
  • 1 tsp. Salt 
  • Black Pepper, fresh ground
  • 1/4 Cup Almonds, chopped 
  • 1 tsp. Lemon Zest 
  • 1/4 Cup Parsley, very finely chopped
  • Preheat the oven to 450 degrees F. 


Directions:

  1. Snap off the ends from the green beans.  You may want to cut the beans in half, vertically and horizontally.  Peel and cut the garlic and shallots, then place beans in a mixing bowl.  Add the salt, pepper, and olive oil, and toss until the beans, garlic, and shallots are well coated with oil.
  2. Use a roasting pan, and make sure the spray with a nonstick spray (you may want to cover the pan with foil first), and arrange the bean mixture in a single layer.  Roast for 12 to 15 minutes, until beans are slightly shriveled, and shallots and garlic are lightly browned.
  3. While in the oven, toss together the almonds, lemon zest, and parsley.  When the beans are out of the oven, add them to the almond mixture and you are ready to serve.

Sweet Cornbread Recipe

This Sweet Cornbread Recipe is a deliciously sweet side to any Thanksgiving dinner.


Ingredients:

  • 1 Cup Cornmeal
  • 1 Cup Unbleached All-Purpose Flour
  • 5 Tbsp. Sugar
  • 1/2 tsp. Salt
  • 2 tsp. Baking Powder
  • 1/3 Cup Canola Oil
  • 1 Cup Milk
  • 1 large Egg, slightly beaten
  • Preheat the oven to 400 degrees F.  Lightly grease and 9” square pan.


Directions:

  1. In a mixing bowl, add the cornmeal, flour, sugar, salt, and baking powder.
  2. Add in the oil, milk, and egg, stirring until everything is combined.
  3. Pour the batter into the pan, and bake for 24 to 30 minutes.  The cornbread should just start to slightly brown, and a toothpick in the middle comes out clean.

  • 1 Can (10.75 oz.) Condensed Cream of Mushroom Soup

Directions:

  1. In a 1 1/2 qt. casserole dish, mix the soup, milk and pepper.  Stir in the beans and 2/3 of a cup of the fried onions.
  2. Bake in the oven at 350 degrees for 25 minutes, and top with the remaining fried onions, baking for 5 more minutes.

Ingredients:


  • 1 Can Yams OR 4 Fresh Yams
  • 1/2 Cup Orange Juice
  • 1/2 Cup Butter
  • 1 1/2 Cups Miniature Marshmallows
  • 1/2 Cup Brown Sugar


Directions:

If from a can, drain the yams and discard the liquid.  Arrange the yams in a baking dish, and pour the orange juice over them.
Sprinkle the brown sugar on top, and dot with the butter.  Next, sprinkle on the marshmallows.
Bake at 350 degrees F for 30 minutes, until marshmallows melt and the liquid, is the bubble.

Ingredients:

  • 1 lb. Cranberries, fresh or frozen (4 cups)
  • 2 Cups Water
  • 2 Cups Sugar

Directions:

  1. Make sure the rinse the cranberries with cool water, and remove the stems and any imperfect berries.
  2. In a large saucepan over medium heat, boil the water and sugar, making sure to stir occasionally.  Let the mixture keep boiling for 5 minutes.
  3. Add in the cranberries, and don’t stop stirring.  Let the cranberries boil, and keep boiling for 5 more minutes.  The cranberries will begin to pop.
  4. Pour into a bowl or container, and let refrigerate for at least 3 hours before serving.

Cranberry Orange Sauce Recipe

Ingredients:

  • 3 Cups Cranberries, clean and picked-over 
  • 1 medium Orange, chopped fine
  • 2 Cups Sugar
  • 1 1/2 Cups Water
  • 1 tsp. Ground Ginger
  • Dash of Cinnamon
  • Dash of Cloves
  • Dash of Cardamom Powder

Directions:

  1. Make sure the cranberries are washed, without stems or debris.  Peel and finely chop an orange.
  2. In a medium saucepan, combine the sugar and 1 cup of the water, heating until the sugar dissolves.  Add the cranberries, then cover and let simmer for 10 minutes, then uncover and let simmer for another 10 minutes.  Make sure to stir occasionally.
  3. Add the rest of the water, the ginger, cardamom, cinnamon, and the orange.  Let it simmer for 20 more minutes, stirring often.  Chill the sauce before serving.

Traditional Thanksgiving Turkey Stuffing Recipe

Ingredients:

  • 1 lb. loaf French Bread, torn into pieces
  • 3/4 Cup Butter
  • 3 to 4 Celery Stalks, chopped including the leaves
  • 1 medium Onion, chopped
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 2 tsp. Poultry Seasoning
  • 2 tsp. Sage 
  • 1 Egg, beaten
  • 2/3 Cup Chicken Broth up to 2 cups, depending upon preference 


Directions:


  1. Tear up the French bread into pieces, around crouton size.  Toast in the oven for about 20 minutes at 200 degrees F, until golden brown.  
  2. In a large pot, melt the butter over medium heat, and add the celery and onion.  Around 3 to 4 minutes in the onion will become caramelized, then turn off the heat.
  3. It’s now time to add the toasted French bread, and add the salt, pepper, poultry seasoning, and sage. Make sure to mix well.
  4. Pour in the chicken broth, a little at a time, making sure the bread doesn’t get too soggy.  Mix with a fork, the key is to not let the stuffing get to wet.  Add the beaten egg, and finish mixing.
  5. You can stuff the turkey or bake it by itself in a greased casserole dish for 40 minutes at 350 degrees F.

Ingredients:


  • 1 Large Loaf of Herb Bread
  • 1 Cup Cranberries, fresh or frozen 
  • 1/2 Cup Apple Juice, unsweetened 
  • 1 Tbsp. fresh Sage, finely chopped
  • 1 Cup Dried Figs, finely chopped
  • 1 Cup Sugared Walnuts
  • 1 Large Onion, chopped
  • 2/3 Cup Vegetable Stock
  • 1/4 Cup Unsalted Butter, melted
  • 1/2 tsp. Sea Salt, fine grain
  • Black Pepper, freshly ground
  • Preheat the oven to 375 degrees F.


Directions:

  1. Cut the bread into 1/2” cubes.  Try for 6 to 7 cups of cubed bread.  Set aside in a large bowl.
  2. Place the cranberries in a small saucepan with 1/4 of a cup of apple juice, and bring it to a boil.  Let simmer, until the cranberries start to pop and split.  Wait a minute before draining off the apple juice, and add the cranberries to the cubed bread.
  3. Add the sage, figs, walnuts, and onion to the mix.
  4. Whisk the remaining apple juice in the saucepan, and add the stock and butter.  Add to the bread mixture and lightly toss and season with salt and pepper.  Bake covered in a casserole dish for 50 minutes at 375 degrees.


Sugared Walnuts Recipe

Ingredients:

2 Egg Whites
2 1/2 tsp. Sea salt, fine grain
1/4 Cup Sugar, natural cane
2 Cups Walnuts shelled
Preheat the oven to 325 degrees F.

Directions:

  1. Whisk the egg whites, salt, and sugar.  Fold in the walnuts, until they are well coated.  
  2. Strain away the remaining liquid, letting it drain for a few minutes, and then place the walnuts on a parchment-lined baking sheet.  Make sure there are no nuts laying on top of each other.
  3. Roast the nuts for 15 minutes, until they take on a golden hue, and their coating is dry.  Make sure they cool before adding the walnuts to the stuffing recipe.

  • 1/2 Cup Bell Pepper
  • 1/2 Cup Onion, chopped

  2. Either, stuff the mixture into the turkey or place it in a greased roster pan, to bake at 350 degrees F for 45 minutes.

Ingredients:

  • 5 lbs. White or Yukon Gold Potatoes, peeled (cut into 2” chunks)
  • 2 1/2 Tbsp. Salt
  • 12 Tbsp. Unsalted Butter, at room temperature (cut into pieces)
  • 1/2 to 3/4 Cup Heavy Cream
  • 1/4 tsp. Ground Nutmeg
  • 3/4 tsp. Black Pepper
  • 1 Cup Sour Cream
  • 1 tsp. Kosher Salt


Directions:
  1. In a large pot, place the potatoes and salt.  Cover the potatoes with cold water.  Then bring to a boil. Then reduce the heat and let them simmer until tender, 20 to 25 minutes.
  2. While waiting, in a saucepan, over medium heat, place in the butter and 1/2 cup of the heavy cream until the butter melts.
  3. When the potatoes are done, drain the pot, and add the butter/cream mixture, nutmeg, pepper, sour cream, and kosher salt.  Mash the potatoes with a handheld masher, you can add more cream if the consistency is too thick, but only 1 Tbsp. at a time.


Yield:  6 to 8 servings

Ingredients:

  • 4 lbs. Yukon Gold, cut into 3” pieces (peeled)
  • 1 tsp. Salt
  • 8 Garlic Cloves peeled and halved lengthwise
  • 1 1/4 Cups Milk or Half-and-Half
  • 3 Tbsp. Unsalted Butter
  • 2 Tbsp. Extra-Virgin Olive Oil
  • Salt
  • White Pepper, freshly ground


Directions:

  1. In a large pot, boil water, adding the potatoes, salt, and garlic, partially covering over medium heat for 15 to 20 minutes.  You may drain the potatoes and garlic when they are tender to a fork.
  2. Over high heat, cook, tossing the potatoes for 1 to 2 minutes until all the moisture is evaporated. Then transfer to a large bowl, and mash them with a potato masher.
  3. In a medium saucepan, heat the milk, butter, and oil over medium heat until the butter has melted. Add this to the potato bowl, and whip with a whisk to a smooth consistency.
  4. Lastly season with salt and pepper, and transfer to a serving bowl.
  5. If you want to get inventive you can add Parmesan cheese, or leeks sautéed in olive oil to the mashed potatoes.

Yields: 8 - 10 servings

Thanksgiving Turkey Gravy Recipe

Prep Time: 25 minutes

Cook Time: 20 minutes

Ingredients:

  • Turkey juices from Roasted Turkey
  • 1 Cup Potato Water from mashed potatoes
  • 2 Tbsp. Water
  • 2 Tbsp. Flour
  • 3 - 4 Cups Giblet Stock
  • Salt
  • Pepper

Directions:


  1. Best to skim off half of the fat in the turkey juices in the roasting pan.  Then add the potato water, stir, making sure to scrape up the brown bits off the bottom.
  2. Pour this into a saucepan.  Place the flour and water into a small jar or zipper seal bag; shake well.  Add this mixture to the saucepan, stirring with a whisk.  Next, add the giblet stock and stir well.  Boil over a high heat until it’s your desired consistency; make sure to stir frequently.  Season with salt and pepper.

Southern Deep Fried Turkey Recipe

Southern Deep Fried Turkey Recipe may sound strange, but it comes out a beautiful golden brown, very moist and tender.  You may just surprise yourself.


INGREDIENT:

  • 10 to 12 lb. Whole Turkey (nonself-basting)
  • 1/3 Cup Dry Sherry
  • 2/3 Cup Vinaigrette
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 tsp. Cayenne Pepper
  • 2 tsp. Lemon Pepper Seasoning Salt
  • Peanut Oil, as needed
  • Injection syringe
  • Outdoor Gas Burner
  • 7-10 Gallon Pot, with a basket
  • Deep Fry Thermometer


Directions:

  1. Remove the giblets and neck, rinse the turkey well with cold water and dry with paper towels.  Make sure to dry the inside cavities.
  2. Then cut the wing tips and tail off, they tend to get stuck in the fryer.
  3. In a bowl, mix the dry sherry, vinaigrette, onion powder, garlic powder, cayenne pepper, and lemon pepper seasoning salt together.  Strain the marinade and place it in an injection syringe.  Inject the marinade in the turkey legs, thighs, and breast.
  4. Then place the bird in a large plastic bag and refrigerate for at least 2 hours.  Flip the bag and massage the turkey from time to time.
  5. Drain the turkey of a marinade and place the turkey in the fryer basket or on a rack, neck down.
  6. The outdoor gas burner should be placed on a level grassy or dirt area.  Grease fires are highly flammable, so make sure there’s a fire extinguisher nearby.  Also, never place the fryer indoors, in a garage, on a deck, and off the concrete.  Keep away from all structures. 
  7. Start to heat the oil in the pot, at the medium-high setting, until it registers 375 degrees F.  This usually takes about 40 to 50 minutes.  Slowly lower turkey into the hot oil, with a partner.  It’s smart to wear oven mitts/gloves, long sleeves, heavy-duty shoes, and even glasses; you don’t want to be burned by the oil.
  8. Check the oil temperature and make sure it’s maintained at 350 degrees F if it drops below 340, the oil seeps into the turkey.
  9. The rule is to fry for about 3 to 4 minutes per pound of turkey.  A 10 to 12-pound turkey usually takes about 35 to 42 minutes.  Never leave the cooker, the oil temperature must be maintained.
  10. The bird should be cooked to 170 degrees F in the breast.  When it’s done carefully remove the turkey from the oil, letting it drain for a few minutes.  (Make sure oil is completely cool before disposing of)
  11. Remove the turkey from the rack and set on a serving platter, cooling for 20 minutes before carving.

Classic Thanksgiving Roasted Turkey Recipe

Here’s a great classic Thanksgiving roasted turkey recipe.  Just out of a Normal Rockwell painting.


Ingredients:

  • 1 (14 to 16 lbs.) Turkey, neck, and giblets (excluding liver) reserved for turkey giblet stock
  • 1 1/2 tsp. Black Pepper
  • 2 1/2 tsp. Salt (2 tsp. if a kosher bird)
  • Kitchen String
  • Instant-read Thermometer
  • Roasting Pan with flat rack
  • Make sure the oven rack in the lower third of the oven and preheat to 450 degrees F.

Directions:

  1. Rinse the turkey inside and out and pat dry.  
  2. Mix the salt and pepper in a small bowl and sprinkle it evenly all over the skin and in turkey cavities. Tie drumsticks together with kitchen string.
  3. Put turkey on the rack in a roasting pan.  Roast the turkey, rotating the pan 180 degrees halfway through the time.  When the thermometer inserted into the fleshy part of each thigh (just before touching the bone) registers at 170 degrees F, take out the turkey.  This is usually somewhere between 1 3/4 to 2 1/2 hours.
  4. Carefully drain the turkey, letting the turkey juices from the cavity drain in the roasting pan.  (If you’re going to make a gravy, you need to save this juice).  Then you can transfer the turkey to a serving platter, wait 30 minutes before serving.  Make sure to cut apart the legs before serving.

  • 3 Eggs, beaten
  • 1 Cup Dark Corn Syrup
  • 1/4 Cup Butter, melted
  • 1/2 Cup Sugar
  • 1 tsp. Vanilla
  • 1/4 tsp. Salt
  • 1 Cup Pecans, coarsely chopped 
  • 1 unbaked pie shell, 9-inch

Preheat the oven to 350 degrees F.

Directions:

  1. Mix the eggs, corn syrup, butter, sugar, vanilla, and salt in a bowl.
  2. Spread the pecans at the bottom of the pie shell.  Pour in the mixture.
  3. Bake for 50 to 60 minutes, at 350 degrees F, until the filling is firm.  The pecans rise to the top to make a delicious crusty layer.

  • 2 Cups Pumpkin (canned or puree)
  • 2 Tbsp. Butter, melted
  • 2 Eggs
  • 2/3 Cup Brown Sugar
  • 1 1/4 Cups Half & Half (or Whole Milk)
  • Pinch Salt
  • 1 tsp. Cinnamon
  • 1/4 tsp. Ground Cloves
  • 1/4 tsp. Ground Ginger
  • 1/2 tsp. Ground Nutmeg
  • 9” pie crust
  • Preheat the oven to 425 degrees F.


Directions:

  1. Place the pumpkin in a bowl, and add 2 Tbsp. of melted butter stirring well.
  2. In a separate bowl, beat the eggs well.  Then, beat in brown sugar, milk, salt, and spices until thoroughly blended.  Add in the pumpkin mixture, and mix well.
  3. Pour into the pie crust and make sure to use the center rack in the oven at 425 degrees F for 10 minutes.  Then reduce the heat to 350 degrees and bake an additional 30 to 40 minutes until the filling is firm.
  4. Cool before serving.  Best with whipped cream.


Whipped Cream Ingredients:

  • 1 Cup Heavy Cream
  • 1 tsp. Vanilla
  • 1/4 Cup Sugar

Directions:

Use an electric mixer to whip the cream until almost stiff.  Add in the vanilla and sugar; beating it until the cream holds peaks.

  • (1) bulb garlic clove, cut in half
  • (4) sprigs rosemary oil
  • (1/3) cup canola oil
  • For the Gravy
  • 1 tablespoons of. extra-virgin essential olive oil
  • Reserved poultry neck and giblets (no liver)
  • (1) medium yellow onion, unpeeled and chopped
  • (1) carrot, unpeeled and diced
  • (3) cups low-sodium chicken broth
  • (1) cup Riesling (German whitened-wine)
  • (3) tbsps unsalted butter, at room temperature
  • (1) cup flour
  • (1) cup flat-leaf parsley, carefully chopped
  • (2) stems rosemary oil, leaves removed and carefully chopped
  • (3) sprigs fresh thyme, leaves removed and carefully chopped
  • Directions:
    Brining Mixture
    1. Bring water to some boil inside a soup pot.
    2. Add salt, honey, broth, peppercorns and rosemary oil inside a soup pot and produce to some boil, stirring to dissolve salt.
