Healthy Thanksgiving Yam Cake Recipes for Children

Ingredients
  • (2) sweet taters, peeled and chopped into 1/2-in. cubes
  • (4) tbsps butter, melted
  • (1/2) tsp nutmeg
  • (1) tbsp fresh lemon juice
  • (1/2) tsp cinnamon
  • (1/2) tsp kosher salt
  • (3) eggs, separated
  • (1/4 – 1/2) cup sugar or sweetener
  • (2) tbsps all-purpose flour
  • (3/4) cup buttermilk
  • (1) sweet piecrust spend baked
  • Directions
    1. Pre-heat oven to 375F.
    2. Pour water right into a medium stockpot having a strainer basket and heat to some boil over medium warmth.
    3. Add sweet taters, cover, and steam for around 20 minutes. Strain sweet taters, transfer to some large bowl, and let cool to room temperature.
    4. Mash these to an even puree using a potato masher.
    5. Add butter, fresh lemon juice, nutmeg, cinnamon, and salt, and mix well.
    6. In a tiny bowl, beat egg yolks having a whisk for around 30 seconds. Add sugar and beat well. Add egg mixture to sweet-potato mixture and stir until eggs are completely incorporated and filling is really a consistent vibrant orange color.
    7. Add flour just a little at any given time, after which you add buttermilk and stir to mix well.
    8. Take another bowl, whisk egg-whites to soft peaks, about 1 1/2 minutes. Lightly fold egg-whites into yams buttermilk mixture until completely combined.
    9. Pour mixture into prepared piecrust and bake on middle rack of oven before the center is firm for around 35 – 40 minutes.
    10. Remove cake from the oven and cool completely. Your special occasion yams cake is ready to serve for both children and grown ups.
