Ingredients:
- 5 lbs. White or Yukon Gold Potatoes, peeled (cut into 2” chunks)
- 2 1/2 Tbsp. Salt
- 12 Tbsp. Unsalted Butter, at room temperature (cut into pieces)
- 1/2 to 3/4 Cup Heavy Cream
- 1/4 tsp. Ground Nutmeg
- 3/4 tsp. Black Pepper
- 1 Cup Sour Cream
- 1 tsp. Kosher Salt
Directions:
- In a large pot, place the potatoes and salt. Cover the potatoes with cold water. Then bring to a boil. Then reduce the heat and let them simmer until tender, 20 to 25 minutes.
- While waiting, in a saucepan, over medium heat, place in the butter and 1/2 cup of the heavy cream until the butter melts.
- When the potatoes are done, drain the pot, and add the butter/cream mixture, nutmeg, pepper, sour cream, and kosher salt. Mash the potatoes with a handheld masher, you can add more cream if the consistency is too thick, but only 1 Tbsp. at a time.
Yield: 6 to 8 servings
